Erucasäure ist eine langkettige einfach ungesättigte Fettsäure mit der chemischen Formel C22H42O2. Sie ist durch eine Kohlenstoffkette von 22 Kohlenstoffatomen und eine einzige Doppelbindung gekennzeichnet, die am 13. Kohlenstoffatom vom Methylende liegt, was sie zu einer Omega-9-Fettsäure macht. Diese farblose bis blassgelbe Flüssigkeit ist unlöslich in Wasser, aber löslich in organischen Lösungsmitteln wie Ethanol und Ether.
