Natriumacetat, mit der CAS-Nummer 127-09-3, ist ein Natriumsalz der Essigsäure, das durch sein weißes kristallines Aussehen und seine hygroskopische Natur gekennzeichnet ist. Es ist hochlöslich in Wasser und bildet eine leicht alkalische Lösung. Natriumacetat hat eine chemische Formel von C2H3NaO2 und eine molare Masse von etwa 82,03 g/mol. Es wird häufig in verschiedenen Anwendungen eingesetzt, darunter als Puffer in der biochemischen Forschung, als Lebensmittelkonservierungsmittel und in der Textilindustrie für Färbeprozesse.
