Hippuryl-Lys-Val-OH is a metal chelator that binds to the positively charged amino acid lysine. It has been shown to be effective in inactivating enzymes and inhibiting the growth of bacteria, such as frondosa, by binding to the enzyme metalloendopeptidase. The optimum pH for this compound is between 7 and 8. Hippuryl-Lys-Val-OH has also been shown to have a strong affinity for hippuric acid, which can be utilized as a measure of its concentration.
