Cellobiose ist ein Disaccharid, das aus zwei Glucoseeinheiten besteht, die durch eine β-1,4-glykosidische Bindung verbunden sind. Es ist ein reduzierender Zucker und wird als Kohlenhydrat klassifiziert. Cellobiose kommt typischerweise in der Zellulose-Struktur von Pflanzen vor, wo es als Baustein dient. Es ist in Wasser löslich, und seine Löslichkeit wird von der Temperatur beeinflusst. Die chemische Formel von Cellobiose ist C12H22O11, und es hat ein Molekulargewicht von etwa 342,3 g/mol.
