δ-Gluconolacton

Beschreibung:

δ-Gluconolacton, auch bekannt als Glucono-δ-Lacton (GDL), ist ein natürlich vorkommendes cyclisches Ester, das aus Gluconsäure abgeleitet ist. Es ist ein weißes, kristallines Pulver, das in Wasser löslich ist und einen leicht süßen Geschmack hat. GDL ist hygroskopisch, was bedeutet, dass es Feuchtigkeit aus der Umgebung aufnehmen kann. Es wird häufig als Lebensmittelzusatzstoff verwendet und fungiert als Sequestriermittel, Säuerungsmittel und Treibmittel in verschiedenen Lebensmitteln. In Gegenwart von Wasser kann δ-Gluconolacton hydrolysieren und Gluconsäure bilden, die eine milde organische Säure ist. It can be used in chemical biology and polymer chemistry to probe hydrogen bonding interactions, polymer compositions, and redox potentials. D-Glucono-1,5-lactone has been shown to inhibit the growth of cells in culture by inhibiting DNA synthesis. This inhibition is due to its ability to bind with high affinity to nucleic acids and prevent the formation of the enzyme complexes required for transcription and replication.
