Chymotrypsin ist ein Serinprotease-Enzym, das eine entscheidende Rolle im Verdauungssystem spielt, indem es die Hydrolyse von Peptidbindungen in Proteinen katalysiert, insbesondere von denen, die an aromatische Aminosäuren wie Phenylalanin, Tryptophan und Tyrosin angrenzen.
