Polyoxyethylen-Sorbitanmonolaurat, allgemein bekannt als Tween 20, ist ein nichtionischer Tensid und Emulgator, der häufig in Lebensmitteln, Pharmazeutika und Kosmetika verwendet wird. Es wird aus der Esterifizierung von Sorbitan und Laurinsäure gewonnen, gefolgt von Ethoxylierung. Diese Verbindung zeichnet sich durch ihre Fähigkeit aus, die Oberflächenspannung zu reduzieren, was das Mischen von Öl- und Wasserphasen erleichtert und sie zu einem effektiven Emulgator macht. Tween 20 ist typischerweise eine blassgelbe bis bernsteinfarbene Flüssigkeit mit einem milden Geruch und ist in Wasser löslich, wodurch stabile Emulsionen entstehen. Sein hydrophiler-lipophiler Gleichgewichtswert (HLB) liegt bei etwa 16,7, was auf eine starke Affinität zu Wasser hinweist und seine emulgierenden Eigenschaften verbessert. Darüber hinaus ist es bekannt für seine geringe Toxizität und wird allgemein als sicher (GRAS) für die Verwendung in Lebensmittelanwendungen anerkannt. Aufgrund seiner vielseitigen Eigenschaften wird Tween 20 auch in Laborumgebungen als Dispergiermittel und in verschiedenen Formulierungen zur Verbesserung der Stabilität und Textur eingesetzt.
