It also inhibits the synthesis of linoleic acid, which is an essential fatty acid. This action may be due to its ability to inhibit the enzyme delta-9 desaturase, which is responsible for the conversion of oleic acid to linoleic acid. The acetate extract of ethyl linoleate has been shown to have anti-inflammatory properties in mice.
