Beschreibung:Asparaginase is an enzyme catalyzing the hydrolysis of I-asparagine to I-aspartic acid and ammonia and can be used clinically to treat lymphocytic leukemia as it deprives tumors of asparagine. Asparaginase is also useful in the food manufacturing process in reducing the production of acrylamide which is a carcinogen.
