Alpha-amylase is a type of enzyme that catalyzes the acylation reaction between glucose and water. It is an organo-metallic compound that is used in many industrial processes, such as paper production, starch sugar conversion, and textile manufacture. Alpha-amylase has been shown to be genotoxic in some cases and can cause DNA damage. The most common form of alpha-amylase is derived from Bacillus licheniformis. The structure of this enzyme was determined using X-ray crystallography and spectroscopy. This enzyme possesses a high degree of sequence similarity to other members of the glycoside hydrolase family 13 (GH13) but lacks the ability to bind calcium ions.
