Z-Ala-Phe-OH is an amino acid with the chemical formula CH3CH(NH2)CO2H. It is a white, water-soluble solid that is used in immobilization chemistry and surface methodology to increase the efficiency of catalysis. Z-Ala-Phe-OH is also an intermediate in the synthesis of caffeine, a stimulant found in coffee beans. The biological function of this amino acid has not been determined, but it has been shown to be a substrate for serine proteases and amide hydrolysis. The catalysed reaction between Z-Ala-Phe-OH and phosgene produces carbonyl groups.
