Antheraxanthin is a natural compound that is synthesized by plants in response to low-light conditions. It is an epoxidase which converts the plant pigment, dehydroascorbic acid, into xanthophylls. Xanthophylls are carotenoids and have a range of functions in plants, including acting as antioxidants and protecting against photo-oxidation. Antheraxanthin has been shown to have enzyme activities that are similar to those of xanthophyll synthases, hydroxylases, and carotenoid oxygenases. Antheraxanthin also has strong biocompatibility with polymer materials and can be used as a food additive or pharmaceutical agent for the prevention of fatty acid oxidation.
