Carboxypeptidase Y is a proteolytic enzyme that is synthesized by baker's yeast. It has been shown to be effective in the treatment of human serum and other fluids, as well as in the hydrolysis of peptides. Carboxypeptidase Y catalyzes the hydrolysis of peptide bonds with a proton at the carboxyl end of the amino acid chain.
