The absorption of carotenoids from foods such as carrots and tomatoes is enhanced by the presence of b-cryptoxanthin palmitate, which may increase the uptake of these carotenoids. This compound also has strong antioxidant properties, which may be due to its ability to inhibit lipid peroxidation and stimulate lymphatic function. The orange colour of this compound may come from its high content of anthocyanins, a type of flavonoid found in plants.
