• Beschreibung: N-[3',4'-Dihydroxy-(E)-cinnamoyl]-L-tyrosine is a synthetic cationic surfactant that has shown the ability to reduce lipid hydroperoxides and to chelate metal ions. It also has antioxidative properties and can be used in pharmaceutical preparations as a buffering agent. N-[3',4'-Dihydroxy-(E)-cinnamoyl]-L-tyrosine can be used as an acid-reactive substance indicator in analytical chemistry, and it is able to form acid conjugates with amino acids such as histidine, tyrosine, phenylalanine, and tryptophan. This compound is also an intermediate for the production of hyaluronic acid, which is a skin care ingredient. The magnesium salt of this compound is used in food chemistry for stabilizing emulsions.
