Beschreibung

3-Hydroxy-3-methyl-2-butanone (HMB) is a hydroxylated hydroxy ketone. It is an important precursor in the chemical industry, used for the synthesis of acrylic acid, acrylates, butanediol, and other organic compounds. HMB is also an important carbon source for bacteria and can be converted to acetoin by yeast fermentation. The reaction mechanism for this conversion has been studied using molecular modelling and kinetic data.
The reaction consists of two steps: first, the hydroxyl group on HMB reacts with hydrochloric acid to form 3-hydroxypropanoic acid (3HP). Then, 3HP reacts with a second molecule of HMB to produce acetoin. This reaction is exothermic and highly efficient because it does not require any external energy input.
