Beschreibung

5-Methyl-1-heptanol is a synthetic, aliphatic alcohol that is used as an antioxidant. It has been shown to have antioxidant activity in an assay that uses the oxidation of linoleic acid by aliphatic alcohols and utilizes butanol as a substrate. 5-Methyl-1-heptanol has also been shown to be able to modify fatty acids, synthesize polypeptides, and decarboxylate linear fatty acids. 5-Methyl-1-heptanol is synthesized by the decarboxylation of 2-methylbutanal using the enzyme decarboxylase.
