Monosodium fumarate is a chemical compound that is used as an acidity regulator. It is a sodium salt of fumaric acid, which has been shown to bind to antibodies and to be acidic. Monosodium fumarate has also been shown to inhibit the production of dopamine β-hydroxylase by human liver cells in vitro. This inhibition may be due to its ability to form an adduct with the enzyme or its ability to chelate zinc ions, which are necessary for activity. Monosodium fumarate also increases the levels of citric acid in human serum, which can cause metabolic disorders such as hyperuricaemia and gout.
