Beschreibung

N-Nitroso-D,L-pipecolic acid is a potent tumorigen and carcinogen. It is found in urine samples of humans and animals. This compound was classified as a Group 1 carcinogen by the International Agency for Research on Cancer (IARC). N-Nitroso-D,L-pipecolic acid is synthesized from dietary nitrites via bacterial enzyme activity. The nitrosation reaction can be inhibited by acidic pH or amines. In addition, this compound inhibits the formation of acid in the stomach and intestine, which may be due to its structural similarities with endogenous compounds that are involved in the production of gastric acid.
