Beschreibung

Methyl trans-2-octenoate is a fatty acid that is found in the ester form in some foods and oils. It has been shown to lower plasma cholesterol levels by increasing the conversion of propionate to butyrate, which is then metabolized into butanol. Methyl trans-2-octenoate also has antioxidant properties. The compound can react with peroxide, forming a mixture of 2,4-decadienal and methyl octanoate. This reaction can be used as an analytical tool to measure the degree of oxidation of fats. Methyl trans-2-octenoate is used in biodiesel production because it can be converted into fatty acids such as octanoic acid and decanoic acid, which are important components of this fuel source.
