Digalactosyldiacylglycerol (DGDG) is a galactolipid that is found in the membranes of plant cells. It has been shown to inhibit the rate of photosynthesis in chloroplasts, which may be due to its interaction with phospholipids. DGDG has also been shown to have an inhibitory effect on pancreatic lipase, which could be due to its hydrophobic character. This compound also interacts with hydrogenated phosphatidylcholine and inhibits the synthesis of triacylglycerols, leading to a decrease in food intake and weight gain. Digalactosyldiacylglycerol also has a synthase gene that encodes for the enzyme required for its production.
