Ascorbato reducido, comúnmente conocido como ácido ascórbico o vitamina C en su forma reducida, es una vitamina soluble en agua y antioxidante. Juega un papel crucial en varios procesos biológicos, incluida la síntesis de colágeno, la función inmunológica y la absorción de hierro de los alimentos de origen vegetal. La estructura química de Ascorbato reducido presenta un anillo de lactona de seis carbonos con múltiples grupos hidroxilo, que contribuyen a su reactividad y solubilidad en agua.
