Trioleína, también conocido como trioleato de glicerilo, es un triglicérido compuesto de glicerol y tres moléculas de ácido oleico. Es un líquido incoloro a amarillo pálido, viscoso a temperatura ambiente e insoluble en agua, pero soluble en disolventes orgánicos como el etanol y el cloroformo. Trioleína se encuentra comúnmente en varias grasas y aceites naturales, particularmente en el aceite de oliva y otros aceites vegetales. Sirve como una importante molécula de almacenamiento de energía en sistemas biológicos y se utiliza en las industrias alimentaria y cosmética por sus propiedades emolientes. En términos de estructura química, Trioleína presenta tres largas cadenas de hidrocarburos, que contribuyen a su naturaleza hidrofóbica. La presencia de enlaces dobles en las cadenas de ácido oleico otorga fluidez a la molécula, convirtiéndola en un componente clave en la formación de bicapas lipídicas en las membranas celulares. CAS:<p>Triolein is a mixture of the monoester, diester and technical grade. It is a model system for studying the biochemical composition of triacylglycerols. Triolein has been shown to inhibit tumor growth in mice by binding to basic proteins. This effect was observed using caproic acid as a control. The contents of triolein were analyzed by chromatography and gas-liquid chromatography. This analysis showed that triolein is composed of approximately 50% caprylic acid, and about 40% each of oleic acid and linoleic acid. The analytical method used was p-nitrophenyl phosphate spectrophotometry, which can be used to measure the amount of fatty acids in triolein.
