Descripción:
Aspartamo es un edulcorante artificial bajo en calorías ampliamente utilizado como sustituto del azúcar en varios productos alimenticios y bebidas. Químicamente, es un éster metílico de dipeptido compuesto por dos aminoácidos: ácido aspártico y fenilalanina, unidos por un enlace peptídico. Su fórmula molecular es C14H18N2O5, y tiene un peso molecular relativamente bajo. Aspartamo es aproximadamente 200 veces más dulce que la sacarosa, lo que permite su uso en pequeñas cantidades para lograr la dulzura deseada.
