Celobiosa es un disacárido compuesto por dos unidades de glucosa unidas por un enlace β-1,4-glicosídico. Es un azúcar reductor y se clasifica como un carbohidrato. Celobiosa se encuentra típicamente en la estructura de la celulosa de las plantas, donde sirve como un bloque de construcción.
