δ-Gluconolactona

δ-Gluconolactona, también conocido como glucono-δ-lactona (GDL), es un éster cíclico que se produce de forma natural a partir del ácido glucónico. Es un polvo blanco y cristalino que es soluble en agua y tiene un sabor ligeramente dulce. GDL es higroscópico, lo que significa que puede absorber humedad del ambiente. Se utiliza comúnmente como aditivo alimentario, funcionando como secuestrante, acidificante y agente leudante en varios productos alimenticios. En presencia de agua, δ-Gluconolactona puede hidrolizarse para formar ácido glucónico, que es un ácido orgánico suave. Esta propiedad lo hace útil en la conservación de alimentos y como regulador de pH. It can be used in chemical biology and polymer chemistry to probe hydrogen bonding interactions, polymer compositions, and redox potentials. D-Glucono-1,5-lactone has been shown to inhibit the growth of cells in culture by inhibiting DNA synthesis. This inhibition is due to its ability to bind with high affinity to nucleic acids and prevent the formation of the enzyme complexes required for transcription and replication. The effects are reversible.
