Descripción:
δ-Gluconolactona, también conocido como glucono-δ-lactona (GDL), es un éster cíclico que se produce de forma natural a partir del ácido glucónico. Es un polvo blanco y cristalino que es soluble en agua y tiene un sabor ligeramente dulce. GDL es higroscópico, lo que significa que puede absorber humedad del ambiente. Se utiliza comúnmente como aditivo alimentario, funcionando como secuestrante, acidificante y agente leudante en varios productos alimenticios. En presencia de agua, δ-Gluconolactona puede hidrolizarse para formar ácido glucónico, que es un ácido orgánico suave. Esta propiedad lo hace útil en la conservación de alimentos y como regulador de pH. Además, GDL tiene aplicaciones en las industrias farmacéutica y cosmética, donde se valora por sus suaves propiedades exfoliantes y su capacidad para promover la hidratación de la piel.
