Descripción:
El monooctadecanoato de sorbitán, derivados de poli(óxido-1,2-etileno), comúnmente conocido como polisorbato 80, es un surfactante y emulsionante no iónico ampliamente utilizado en alimentos, productos farmacéuticos y cosméticos. Se deriva del sorbitán, un alcohol de azúcar, y del ácido octadecanoico (ácido esteárico), con cadenas de poli(óxido-1,2-etileno) que proporcionan propiedades hidrofílicas. Este compuesto se caracteriza por su capacidad para reducir la tensión superficial, lo que permite la estabilización de emulsiones y la solubilización de sustancias hidrofóbicas en soluciones acuosas. Típicamente es un líquido amarillento a ámbar con un olor suave y es soluble en agua, aceites y disolventes orgánicos. El polisorbato 80 es conocido por su baja toxicidad y se reconoce generalmente como seguro (GRAS) cuando se utiliza en productos alimenticios.
