Crotonic anhydride reacts with hydroxyl groups, alkynyl groups, and functional groups, including amino acids. This results in a change in the structure of proteins and enzymes, which can have an effect on enzyme activity. Crotonic anhydride also stimulates peroxisome proliferation.
