Hexadecyl acetate is a fatty acid that is used as a solvent in chemical analyses. It is found in the form of esters in many vegetable oils, such as wheat germ oil. Hexadecyl acetate has been shown to inhibit the production of inflammatory cytokines and prostaglandins when injected into mice at physiological levels. This compound also has an inhibitory effect on receptor binding, which may be due to its ability to compete with other fatty acids for binding sites on the cell membrane. Hexadecyl acetate can be synthesized by metathesis reactions between different oleic acid derivatives.
