Descripción:2-Methyloctan-1-ol is an organic compound that is a major constituent of the essential oil of lettuce. It has significant antioxidant activity and catalyses the oxidation of long-chain cinnamic acid derivatives. 2-Methyloctan-1-ol also reacts with fatty acids to form lipase, which breaks down fats into fatty acids and glycerols. This reaction rate can be increased by adding aldehydes, which are produced from the allylation of 2-methyloctan-1-ol with propylene or butadiene. 2-Methyloctan-1-ol also reacts with fatty esters to form immobilized products.
