Ethyl 3-hexenoate is an organic compound with the molecular formula C10H16O2. It is a colorless liquid that has a fruity odor. Ethyl 3-hexenoate is an intermediate in the metabolism of fatty acids and synthesis of p-hydroxybenzoic acid, which is used as a food preservative. This compound also has been found to be one of the major components of environmental pollution, due to its high vapor pressure and low water solubility. The metabolic pathways for ethyl 3-hexenoate are not well understood, but it can be converted into other compounds such as ethyl decanoate and p-hydroxybenzoic acid by alcohol dehydrogenase or oxoaldehyde dehydrogenase. This compound can also be synthesized from phenylpropionic acid by palladium complexes in the presence of hydrogen gas.
