Coutaric acid is a polyphenolic antioxidant compound found in the reaction products of cinnamic acid derivatives. It has been shown to have light-protective effects by reacting with free radicals and preventing them from forming. Coutaric acid is also present in wine, which may contribute to its antioxidant properties. The chemical structure of coutaric acid is similar to that of trifluoroacetic acid, protocatechuic acid, procyanidins, and p-hydroxybenzoic acid. Coutaric acid is a component of phenolic acids and tannins that are found in food.
