Trans-2-Hexenal is an aldehyde that is synthesized from the oxidation of unsaturated fatty acids and plays a role in the synthesis of other compounds, such as propionate. It is found in damaged fruit and vegetables. The biological function of trans-2-hexenal has been studied in detail by summarizing its effects on insects, plants, and mammals. In insects, it causes damage to the cuticle and affects locomotion. In plants, it can cause senescence or leaf abscission. In mammals, it can cause irritation of the conjunctiva or respiratory tract at high concentrations (above 2 ppm). Trans-2-hexenal also reacts with oxygen to form volatile compounds such as β-caryophyllene. These reactions have been analysed using headspace gas chromatography/mass spectrometry techniques.
