Phytic acid potassium is an inorganic, long-acting molecule that inhibits the production of biogenic amines. It has a ring structure with two functional groups, and can be degraded by soil microorganisms. Phytic acid potassium is a model system for inhibitory molecules. The molecule binds to the functional groups on the enzyme and prevents them from interacting with other molecules. This inhibition leads to reduced production of biogenic amines. Phytic acid potassium is also a chloride ion donor, which may contribute to its inhibitory effect on biogenic amine synthesis.
