L-3-Aminomethylphenylalanine is a modified amino acid that has been found to be an effective inhibitor of tannin exudation. L-3-Aminomethylphenylalanine competitively inhibits the enzyme tannase, which catalyzes the hydrolysis of esters and amides in plants. This amino acid was shown to inhibit the release of tannins from plant tissues, suggesting that it may be used as a flavonoid inhibitor. L-3-Aminomethylphenylalanine has also been shown to have antioxidant properties, with potential for use in pharmaceuticals or cosmetics.
