Vanillin is a naturally occurring organic compound with the chemical formula C8H8O3. It is the most widely used natural flavoring substance. Vanillin can be found in a variety of foods, beverages, and fragrances. Vanillin is found in vanilla extract, which is made from the cured seed pods of Vanilla planifolia. The main component of vanilla extract is vanillin that has been extracted from the ground-up pods and seeds of the vanilla orchid. Vanillin can also be produced synthetically from eugenol, which is another naturally occurring substance. Eugenol itself can be found in cloves and other spices such as basil, cinnamon, and nutmeg.
Vanillin was first isolated by French chemists in 1874 by oxidation of coniferin (a substance present in pine sap). This discovery led to an increase in demand for harvested pine trees because it was so popular to produce vanillin commercially due to its strong taste and scent.
