Citronellic acid is a naturally occurring organic compound that possesses a carbonyl group, which gives it its name. It is an active analog of citronellol and has similar biological properties. Citronellic acid can be synthesized in high yield through the oxidation of citral with hydrogen peroxide. Its optical isomer is (S)-(−)-citronellic acid, which possess a higher boiling point and greater stability than (R)-(+)-citronellic acid. The hydrophobic nature of this molecule gives it a bitter taste, which activates the receptors on the tongue to produce the sensation of bitterness. Citronellic acid also has the ability to hydrolyze under alkaline conditions, producing salts such as potassium citronate or sodium citrate.
