Dihydrokaempferol-3-O-glucoside (DHKG) is a phenolic compound that has been shown to be an antioxidant. The antioxidant potential of DHKG was estimated using the DPPH assay and the hydroxyl radical scavenging activity. Dihydrokaempferol-3-O-glucoside has also been found to have a high affinity for phosphomolybdate, which is used in analytical techniques as a phosphate standard. This compound can be isolated from extracts of Chinese Huang Shan tea leaves by ethanol extraction and purified by HPLC. The structure of this compound was elucidated by triple quadrupole mass spectrometry and liquid chromatography. Dihydrokaempferol-3-O-glucoside can be used as an antioxidant in various food products such as jams, syrups, and beverages.
