Gly-Phe-Phe-OH is a synthetic compound that has been shown to be an inhibitor of quinine. It was synthesized by reacting phenylalanine with glyoxylic acid, and its structure was confirmed by nmr spectra. The optimum pH for Gly-Phe-Phe-OH is between 5 and 6. This compound is hydrated in water, which may account for its bitter taste.
