Gamma-heptalactone is a cyclic ketone that is found in plants and fruits. It can be synthesized by the hydrolysis of maltol, which is a product of the oxidation of glucose. Gamma-heptalactone has been shown to have antibacterial effects against soil bacteria and fungi. Gamma-heptalactone also has an inhibitory effect on the growth of some plant pathogens, such as potato and tomato, but can stimulate the growth of others, such as tobacco. The addition of gamma-heptalactone to soil or water inhibits bacterial activity due to its ability to act as a carbon source. Gamma-heptalactone has been reported to be used as an additive in processed meat products for its antimicrobial properties.
