Descripción:4-Hydroxy-6-methyl-2H-pyran-2-one is an acid lactone that has been shown to have physiological effects in wild type strains of Escherichia coli. The lactone ring is opened by enzyme activities and the resulting hydroxyl group reacts with diazonium salt to form a triacetic acid, which inhibits the growth of bacteria. 4-Hydroxy-6-methyl-2H-pyran-2-one also has antimicrobial activity against bacteria and fungi. It can be used as a food preservative or a disinfectant.
