Hydratropic aldehyde is a carbonyl compound that has been shown to inhibit the growth of bacteria. This activity may be due to the nucleophilic attack of the hydroxyl group on the unsaturated alkyl, which inhibits bacterial dna synthesis. Hydratropic aldehyde can be synthesized from ethyl formate and hydrogen peroxide in vitro. Hydratropic aldehyde is also an effective control agent for lemongrass oil, which can inhibit lipid oxidation. The active methylene group in this molecule reacts with ethyl formate to produce hydratropic aldehyde and ethanol. The endpoints of this reaction are determined by measuring the amount of methyl anthranilate produced in each reaction mixture.
