Kitol is a polycarboxylic acid that is used as a food additive and in the production of pharmaceuticals. It has been shown to inhibit the binding of bradykinin to its receptor, which may be due to the presence of an active methylene group. Kitol also inhibits collagenase activity by blocking the carbonyl group. This compound has been found to have anti-inflammatory properties when it reacts with fatty acids. Kitol can be synthesized from natural sources such as root powder or can be produced synthetically with reactions involving alcohols, hydroxyacids, and other chemicals.
