Linustatin is a human food that belongs to the group of n-3 fatty acids. It is a type of fatty acid that has been shown to have effects on insulin sensitivity and may be beneficial for people with diabetes. Linustatin is found in high concentrations in flaxseed, and can be extracted from this source using an acidified water solution. The concentration of linustatin in dried flaxseed ranges from 0.07% to 0.2%. Linustatin can also be found in the form of secoisolariciresinol, which is a dry weight extractable fraction. There are two chromatographic methods used to extract linustatin from flaxseed; one uses acidic water and the other uses a basic water solution.
