Methyl-2-tetrahydrofuroate is an ester of acrylonitrile and 2-hydroxypropanoic acid. It is the product from the reaction of methyl chloroacetate and sodium methoxide. This reaction occurs in an aqueous system with a high concentration of substrate and a low concentration of enzyme. The reaction is stereoselective, which means that only one enantiomer is produced for each substrate molecule. The rate of this enzymatic reaction depends on both the concentration of reactants and enzymes, as well as the time allowed for the process to happen.
