Descripción:2-Nitroethanol is a chemical compound that is used as an antioxidant, antimicrobial preservative, and flavoring agent in foods. It can be synthesized in an asymmetric synthesis reaction, which involves the addition of a nitro group to one of the two carbons in ethylene glycol. The toxicity profile of 2-nitroethanol has not been extensively studied, but it appears to have low toxicity based on animal studies.
