Ascorbic acid is the most commonly occurring form of vitamin C. It is a water-soluble vitamin that acts as an antioxidant, protecting against oxidative damage to cells. Ascorbic acid has been shown to have a protective effect on plant metabolism and can be used as a model system for studying plant metabolism in vitro. Ascorbic acid also participates in many biochemical reactions, including glycol ether formation, enzyme activities, and body formation. The reaction solution containing ascorbic acid can be used to remove metal ions from the test solution by chelating them with the ascorbic acid. This process also protects against oxidation of other molecules by removing reactive oxygen species such as anion radical scavenging.
