It is used in a method for determining the concentration of antioxidants in a sample by injection into the gas phase. The chemical ionisation (CI) and electrospray ionisation (ESI) are used to produce ions from the peptide. The compounds are then separated using chromatography before being quantified by measuring their mass using a mass spectrometer. This process is repeated until all of the antioxidant has been eluted from the column.
