Sodium ortho-anilate is a chemical compound that is a metabolic product of sodium nitrite. It has been shown to have high resistance to the flavus group of fungi, and can be used as a preservative in foods. Sodium ortho-anilate has been validated for use with physicochemical and sulfate parameters, and is also reactive with benzene, ammonium sulfate, and anhydrous sodium. This compound chelates metal ions such as copper or iron in the presence of an organic acid. The nature of this compound’s surface can be determined by surface methodology.
