(E)-Ethyl 3-(2-methoxyphenyl)acrylate is a synthetic compound that has been shown to be an effective nitro radical scavenger. It is also used as a solid catalyst in organic synthesis, specifically in the preparation of vinyl alcohols. This compound can be found as a volatile oil in plants such as black pepper, and has been shown to have anti-inflammatory properties. (E)-Ethyl 3-(2-methoxyphenyl)acrylate has also been shown to inhibit pancreatic lipase through its action on the chloride ion. The mechanism of this inhibition is not known but may involve radical scavenging activity.
